When I first started my transition to a plant-based lifestyle, I struggled to come up with quick, convenient, and filling meals. I saw several of my virtual foodie mentors talking about how great chia seeds were, but I could never get into them. I grew up eating meat and dairy so, the idea of making a meal out of seeds and non dairy milk was not appetizing to me. Then, I found a formula that I actually love.
Now, Mango, Coco-Lime Chia Seed Pudding is my jam!
- Whisk 1/2 cup of chia seeds , 3 cups of unsweetened almond milk, 1 tablespoon of grade B maple syrup (optional), and a couple drops of vanilla extract in a bowl.
- Cover and let this mixture sit in the rerfrigerator over night.
- Remove the bowl the next morning and top the mixture with fresh mango slices, unsweetened shredded coconut and a squirt of lime.
Lime compliments the flavors of coconut and mango. Plus – I cringe whenever I see a plate without something green on it. Even if it’s just a garnish, I need that color! Chia seeds are packed with fiber, potassium, calcium, protein, phosphorus and antioxidants that will be sure to keep your skin glowing. They are also super filling. Have you ever tried chia pudding?
