When I first started my transition to a plant-based lifestyle, I struggled to come up with quick, convenient, and filling meals. I saw several of my virtual foodie mentors talking about how great chia seeds were, but I could never get into them. I grew up eating meat and dairy so, the idea of making a meal out of seeds and non dairy milk was not appetizing to me. Then, I found a formula that I actually love.

Now, Mango, Coco-Lime Chia Seed Pudding is my jam!

  1. Whisk 1/2 cup of chia seeds , 3 cups of unsweetened almond milk, 1 tablespoon of grade B maple syrup (optional), and a couple drops of vanilla extract in a bowl.
  2. Cover and let this mixture sit in the rerfrigerator over night.
  3. Remove the bowl the next morning and top the mixture with fresh mango slices, unsweetened shredded coconut and a squirt of lime.
  4. Enjoy!

Lime compliments the flavors of coconut and mango. Plus – I cringe whenever I see a plate without something green on it. Even if it’s just a garnish, I need that color! Chia seeds are packed with fiber, potassium, calcium, protein, phosphorus and antioxidants that will be sure to keep your skin glowing.
