Tired of kale? I hear you. Here’s a different way to pile on all the veggies without sacrificing nutrients or flavor.

Ingredients (Serves 1)

Organic Black Forbidden Rice

1 Organic Cucumber

Organic Broccoli Sprouts

1/2 an Avocado

Organic Romaine Lettuce

Organic Minced Ginger

Organic Rice Vinegar

Nori and Hemp Seeds to Taste

  1. Cucumber skin can be quite bitter. Wash and peel your cucumber and cover with rice vinegar in a bowl. Let marinate in the refrigerator for a minimum of 2 hours.
  2. While your cucumber is marinating, cook your rice as instructed on the package. I typically combine 1 cup water, 1 cup of rice, bring to a boil, simmer for 30 minutes, then fluff.
  3. Once your cucumbers are done, pour off the rice vinegar. Assemble your plate rice first. Then chop and add your veggies. Enjoy!
