During the summer months, I crave more fresh juice and smoothies. I love juicing bell peppers due to their antioxidant and anti-inflammatory properties. Plus, they taste pretty sweet too! I recommend drinking this in the morning (especially for those trying to quit coffee) because the ginger definitely gives you a boost of energy. Great for healthy digestion and circulation.

Ingredients (Serves 1)

4 large organic yellow bell peppers

2 organic golden delicious apples

1 organic thumb of ginger

Directions

  1. Wash your produce and chop it into small pieces.
  2. Juice the bell peppers first, then the apples. Always juice the ginger last because it is the hardest on the machine. The Omega VRT 350 HD is one of my favorite juicers.
  3. Even though my juicer does a great job of removing pulp, I like my juice to be extra smooth. After everything has been juiced, I pour the mixture over a mesh strainer.
  4. After the second round of straining, I pour and store my juice in glass jars. Storing your juice in glass helps to preserve the nutrients. When stored in glass, fresh pressed juice can last in the refrigerator for up to 72 hours.
