Tired of kale? I hear you. Here’s a different way to pile on all the veggies without sacrificing nutrients or flavor.
Ingredients (Serves 1)
Organic Black Forbidden Rice
1 Organic Cucumber
Organic Broccoli Sprouts
1/2 an Avocado
Organic Romaine Lettuce
Organic Minced Ginger
Organic Rice Vinegar
Nori and Hemp Seeds to Taste

- Cucumber skin can be quite bitter. Wash and peel your cucumber and cover with rice vinegar in a bowl. Let marinate in the refrigerator for a minimum of 2 hours.
- While your cucumber is marinating, cook your rice as instructed on the package. I typically combine 1 cup water, 1 cup of rice, bring to a boil, simmer for 30 minutes, then fluff.
- Once your cucumbers are done, pour off the rice vinegar. Assemble your plate rice first. Then chop and add your veggies. Enjoy!
