As a plant-based foodie in the District, one of the hardest things for me to do is find a soy and gluten-free vegan brunch in the area that I can get excited about! I decided to start experimenting with my own brunch options at home and voila!, these vegan moringa waffles were born. Yes, waffles are better than pancakes. Don’t debate me on this. I mean they have pockets for goodness sake. However, you can totally use the recipe below to make moringa pancakes.
So what exactly is moringa? Moringa, (moringa oleifera) not to be confused with matcha, is a tropical tree that is often referred to as one of the world’s most nutritious plants. Moringa is a high-protein energy booster that is rich in vitamin C and vitamin A. It helps fight inflammation, can slow signs of aging, and also helps lower blood pressure.
