I’ve been obsessed with curry lately and wanted to share this one pot vegan yellow curry dish I made with you! I love one pot meals because they are super filling and an easy way to use up those fresh herbs and spices in your refrigerator that you may have purchased on impulse. Here’s what you need:
1 can organic coconut milk or coconut cream (I like Edward & Sons Trading Co. because they have a guar-free version)
1-2 cups organic vegetable broth
1-2 packs of Mikes’s Organic yellow thai curry paste depending on how much sauce you want to pour over your dish (I used 1 pack)
5-6 large organic red potatoes, chopped
1 large organic white onion
1 1/2 cups organic chickpeas
1 cup organic frozen petite green peas (no salt added)
1 organic bay leaf
1 small organic thumb of ginger, grated
1/2 organic jalapeño pepper, chopped
Salt and za’atar to taste

Simmer covered on your stove or in your crockpot for 35 mins or until potatoes are soft. Pour over rice or quinoa and garnish with your favorite green herbs. I used scallion and cilantro. Enjoy!
